The Evelyne’s Vanilla is the power of three vanilla (India Madagascar and Tahiti) staged in simplicity but with a surprising set of textures.
A rectangular and compact design once again, so that in every bite explodes all the flavor and sensitivity of each of the vanilla used. A thin coating of salted almond and white chocolate which will allow to contain the ultra smooth textures and a little salt to minimize the taste of sugaron the whole.
One of my most technically accomplished cakes and a little nod to my friend Angelo who initially helped me to develop it.
